Guanabanas

Dear Em,
While we were on our trip, Daddy & I were lucky enough to have a date night. You Aunt A & L got us a gift certificate to a Guanabanas in Jupiter, Florida & graciously agreed to babysit. Your daddy & I don't get a whole lot of alone time these days, & I looked forward to a night out. Your Aunt A promised we would love the restaurant, & she was right.

Guanabanas is an amazing place right on the water. It's open & outdoors with palm trees & green plants everywhere. It brought me right back to our honeymoon in St. Lucia where a lot of the lunch places had a ceiling but no walls. It was a little chilly that night, & we sat in an area with a roof over our heads & clear plastic protecting us from the wind while still providing us a clear view of the water. As we sat, I felt so relaxed & just took in our amazing surroundings.

I had a hard time ordering. There was so much to chose from & everything on the menu looked so good. We decided to start with an appetizer, Sharky's Conch Fritters. We don't get a whole lot of conch up in Rhode Island & looked forward to trying something new. They were yummy. They reminded me of a mix of a clam cake & a stuffie... but nothing beats Rhode Island clam cakes & stuffies.


Next came our entrees. We both ordered from the specials menu. Daddy ordered the pork chops. They were tender & just the right mix of sweet & savory. Corn pudding, something we've never had before, was one of his sides. He loved it & has been raving about it since we ate there.


I asked the waitress what she would recommend between the Soft Shell Crab Special & the Lemon Butter Fresh Catch. She didn't even take a second to think before she said the Fresh Catch. She said it was a favorite among those who come to Guanabanas (your Aunt A had actually raved about the Fresh Catch too). She also mentioned she just wasn't a big fan of soft shell crab. I made a split second decision & ordered the crab (I know, I'm that annoying person in a restaurant). I'd never had soft shell grab, & was feeling adventurous. 

I almost wanted to take it back the moment our waitress walked away with our orders. What if I hated soft shell crab? Our meals came out & I closed my eyes as I took the first bite...I LOVE soft shell crab. Well, I love Guanabanas soft shell crab. It was lemony, buttery amazingness. I wish we weren't a 24 hour car ride away from Guanabanas. I would ask if the chef would make me the special every single day (Oh, & try the Fresh Catch).


It was such a perfect place for a date night. It would also be a wicked fun place to go with friends. If only we weren't so far...

I'm sure we'll be making some repeat visits when we are back to visit your Aunt A & L. Or maybe we could just move to Florida where it's sunny & there are palm trees...

No, I would miss the Rhode Island stuffies & clam cakes.

lunch with dinosaurs & lots of Lego fun

Dear Em,
During our Florida trip, we discovered a place where you can enjoy Disney magic without having to pay to get into a park. Downtown Disney is a fun, outdoor area filled with shops, restaurants & entertainment. After some much needed relaxing pool time the day after our Disney experience, we headed there for lunch.

I've never had a lunch like the one we had that day, because I've never eaten in the midst of dinosaurs before. We ate at the T-Rex Cafe. Once inside, we were greeted by a T-Rex. I don't claim to be an expert on dinosaurs, & I'm not quite sure how big T-Rex's were, but this one was awfully big to you.


You were happy to be escourted away to the prehistoric ocean area, where we sat to eat. It was the perfect place for children. You got to color on your menu. It didn't matter how loud you got, the restaurant was always louder. Every 15 minutes we were entertained by a thunder & lightening storm. It was really cool.

You started to get antsy toward the end of lunch. While Daddy, Aunt A, & L finished their lunches & paid the bill, you & I walked around. We found some dinosaurs that you weren't frightened of, a triceratops & her baby. I guess dinosaurs are less scary when they're "Mommy" & "Baby" dinosaurs. You were so excited to pet the baby triceratops.


The T-Rex cafe wasn't just a restaurant, it was an experience. We stopped by the Woolly Mammoths standing beneath a snowfall on the way out. You were excited to see baby Woolly Mammoths, but got a little uneasy when you looked up & saw the size of the "Mama."


We left & went next door to the Lego Imagination Center. I've never seen so many Lego's in my life. There was an area to shop, areas to build & play, & areas with amazing Lego displays. We had a blast without even spending any money.

Yup, that is a Woody & Buz on a Rocket Ship display made completely out of Lego's.


I hadn't seen you play with Lego's before, & it was so fun to watch you build & create. The larger Lego's were definitely better for your little hands. Aunt A & L had fun building & creating too.


Can you believe that dragon behind you was made out of Lego's?! It was sitting in water. How do they do that? Blows my mind.


After our Lego fun, we walked around Downtown Disney for a little while. It was so nice to take in all of the fun sites while getting some Florida sun on our faces.


Next time, I want a ride on on this hot air balloon.



Right before we left, we made wishes in the fountain. You like to sing, "I'm wishing" (from the movie Snow White) when you make your wishes. It was the perfect ending to our Orlando fun.

One Magical day at Disney


Dear Em,
Your daddy & I had talked a lot about how old you should be when we took you to Disney. Daddy really wanted you to be old enough to be able to remember the trip. He was ten when he went & remembers it fondly. I was five or six & can't really remember anything from the trip I went on with my family. Then we made plans to visit your Aunt A in Florida & realized she lives less than two hours from Disney. So, we decided, why not spend one magical day in Disney (bonus, kids under three get in free). We thought about which park to take you to, but with your current love of everything princesses, the Magic Kingdom was an easy choice.

We had pre-ordered our tickets to be picked up at Will Call, because I had read somewhere online that it was the fastest & cheapest way to buy your tickets. The Will Call line took at least 45 minutes, while your Aunt A & L got their tickets from the electronic vending machines in less than 5 minutes...for the same price. You cried & begged us to change your diaper the entire time we stood in the Will Call line. Needless to say, next time we will get our tickets the day of at the vending machines.

Once we were inside the park, we were greeted by a show of singing trolley riders. We just happened to be in the right place at the right time, & you loved starting our day off with the singing & dancing.


The first ride we saw was a Snow White ride. It couldn't have been more perfect. You love Snow White. The line moved really quickly, & you were actually excited to wait your turn.


As we went through the ride, Daddy & I worried you would be scared. The ride seemed to highlight all of the dark & scary parts of Snow White. I couldn't understand why the happy & light parts of Snow White weren't included. Luckily, you enjoyed the ride even through the darkness. As we exited the ride to find where we had "parked" our stroller (every ride had a stroller parking area, it was amazing), I looked back to see the name of the ride, Snow White's Scary Adventure. Well, that explains it. Whoops.

After getting our feet wet with our first ride, we decided to go do what you had really come to Florida for, to meet Rapunzel. We found the Fairy Tale Garden where Rapunzel is. We were told that the line would take over an hour, but only one person had to stand in line to hold the spot for everyone in their party. We were also told that the line would only get longer during the day. So, we decided to wait. Actually, I waited while you went on the Teacups with Daddy.



You loved the Teacups. After that, you joined me in line, & Daddy went to get us some lunch. This, for sure, was the most productive line waiting I've ever done. It was perfect. Luckily, we actually made it in a lot sooner than we thought we would (probably only 30 minutes). Once inside the Enchanted Courtyard, they had coloring & benches while we waited to meet Rapunzel. We happily colored & ate lunch.


As we got closer to Rapunzel, you bubbled with excitement & called, "Rapunzel, let down your hair." You were so excited to finally meet Rapunzel. You hugged her & pet her hair & talked a mile a minute. She called you a little chatterbox & said you were yellow like the sun in her story. I actually started to tear up a little. You were so happy to meet your favorite princess whose movie we've all watched 5,000 times. I just wanted to bottle up this precious moment. Luckily, I took pictures & video.



Next we headed to the Tomorrowland Speedway. You had to be 32 inches to ride, & luckily you're 35.5 inches. Daddy was excited to let you drive (the cars ride on a metal track so we weren't worried about you causing too much damage). I giggled as I rode in the car in front of you. It looked like Daddy was riding in a car with no driver. The top of your head barely cleared the steering wheel. There's no way you could see where you were driving, but you didn't care. You loved driving.






We spent the rest of the day watching the parade & going on one fun ride after another. I was pleasantly surprised that the lines were not that bad, most 30 minutes or less. There were fun things to see & do while we waited. While waiting for It's a Small World, we made wishes as we threw pennies into the water. 

We were impressed at how well you did. Did you get antsy & squirmy in some of the lines? Absolutely, but you did better than we could expect a two year old who didn't get a nap & is not accustomed to waiting in line. We tried to follow up long lines with rides with shorter lines & catch a show or the parade where there were no lines in between. I think there were times when we all needed a time out, but we were successful overall.

We ended the night with the amazing firework show. I couldn't believe what they did with lights, music, & fireworks. It was a perfect end to a magical day.


 You made sure to hold on while riding the monorail back & called it one last ride.


You asked for a banana in the car & fell asleep mid-bite before we had even gotten out of the parking lot. I've never seen you so exhausted. You continued to sleep when we stopped the car, as I carried you in, & 90% of the way through changing your diaper & putting your jammies on. You were pooped, we all were!


So glad to have shared such a magical day with you & that you enjoyed it as much as you did. You may not remember it, but I always will. I will remember your smiles & giggles & excitement. I think looking at Disney through your eyes is the best way to look at it.

a house in mourning

Dear Em,
Today we are in mourning. You should be all in black, but black isn't really your color. So, instead you're wearing a pink hearts tutu, an orange & pink flower shirt, & flower clips in your hair. BUT we are still in mourning. We not only mourn the end of football season, but also the disastrous end of the season for Patriots fans.

Gasp...the Giants beat the Patriots in the Super Bowl...AGAIN. In the most nail bitting way.

With the way our defense looked this season, I suppose most of us didn't think the Patriots would make it into the Super Bowl. I guess we should be happy for how far they made it.

BUT we are still in mourning.

Things started out great yesterday. We cooked some yummy food. We had TONS of food. We all had our Patriots jerseys on (you & Daddy rock Tom Brady jerseys & I wear my Teddy Bruschi jersey). We had a great set-up in Mantown.



You played a lovely rendition of your ABCs on the Rock Band drum kit.


BUT...things quickly turned sour.


Once the game ended I had to ask our friends to check under their car before pulling out of our driveway to make sure Daddy wasn't laying under their car.

At least we had yummy food. Actually, what am I talking about? We still have tons of leftovers that will be calling out my name for the remainder of the week. Our friends brought Dynamite, a Woonsocket delacacy. Daddy made stew & helped me make calzones. I made buffalo chicken dip & Bloomin' Bread.

I'll list the recipes for the calzones & the Bloomin' Bread here since they were all easy to make & super yummy. I love to play around with stuffing different things in calzones. Last night I made a Mashed Potato, Bacon, & Cheese Calzone & a Spinach, Pepperoni, & Cheese Calzone. They were both super yummy & easy to eat while watching the game.

Mashed Potato, Bacon, & Cheese Calzone
Ingredients
- Bag of pizza dough (I'm sure you can make your own, but we've always bought ours)
- Mashed potatoes (in the past I made them from scratch, this time we used a bag of instant)
- 1 cup shredded mozzarella or cheddar cheese
- Bacon (I think we cooked a pound)

Let the dough sit out on a plate for at least an hour while you cook the Bacon & prepare the mashed potatoes. Heat oven to 400 degrees. Grease baking sheet & stretch the dough out to cover the width & length of the sheet. Patch any holes. Spoon the mashed potatoes down one side of the dough (lengthwise) leaving a border on the edge for closing. Top with the bacon, & sprinkle the shredded cheese over the mashed potatoes & bacon. Close calzone by folding the unfilled side over the filled side (lengthwise). Crimp the edges closed with your fingers or a fork so that there are no holes or openings. Cook for 40-60 minutes. Crust should be browned & hard on the outside. Let sit for 20 minutes. Slice & enjoy.

Spinach, Pepperoni & Cheese Calzone
Ingredients
- Bag of pizza dough (I'm sure you can make your own, but we've always bought ours)
- Box of frozen spinach
- Garlic powder
- Pepper
- Pepperoni
- 2 cups shredded mozzarella cheese

Defrost spinach before cooking. Let the dough sit out on a plate for at least an hour. Heat oven to 400 degrees. Drain spinach of excess water. Put spinach in a bowl & season to your taste with garlic powder & pepper. Mix in a cup of shredded mozzarella cheese. Grease baking sheet & stretch the dough out to cover the width & length of the sheet. Patch any holes. Spoon the spinach mix down one side of the dough (lengthwise) leaving a border on the edge for closing. Cover the spinach mix with pepperoni. Sprinkle top with remaining cup of mozzarella cheese. Close calzone by folding the unfilled side over the filled side (lengthwise). Crimp the edges closed with your fingers or a fork so that there are no holes or openings. Cook for 40-60 minutes. Crust should be browned & hard on the outside. Let sit for 20 minutes. Slice & enjoy.

From time to time I come across recipes on the internet that I want to try. When I saw the recipe for the Bloomin' Bread on The Kitchen Life of a Navy Wife, I was excited to try it out. Mercedes cooks & posts about all kinds of food that are typically easy to make & seem so yummy. I have a list of recipes from her site that I hope to try. This bread will be a repeat for when we have get-togethers. It was SO yummy.

Bloomn' Bread

Ingredients
- 1 unsliced loaf of sourdough bread
- 12-16 ounces of Monterey Jack cheese (we bought it from the deli & had them thinly slice it)
- 1/2 cup butter, melted (the next time I might use a little less, it was pretty greasy)
- 1/2 cup finely diced green onion
- 2 teaspoons poppy seeds

Heat oven to 350 degrees. The recipe called for cutting the sourdough bread lengthwise & widthwise without cutting through the bottom crust. I just cut it widthwise, thinking it would be easier to eat slices of the bread. It was still plenty cheesey. Place bread on foil-lined baking sheet. Insert cheese slices between cuts. Combine melted butter, green onions, & poppy seeds. Drizzle over bread. Wrap in foil. Bake for 15 minutes. Unwrap & bake for 10 more minutes or until cheese is melted.

At least we won't have to cook at all while we mourn. Here's to next year.

I pooped again...

Dear Em,
We were in sunny Florida. It was another gorgeous day, the day after our Disney adventure. We were happy to be doing a little relaxing before exploring Orlando some more. You, Daddy, & I were floating around in the hot tub. There was another couple & their 3 kids soaking in the hot tub as well.

That's when you said one of the most embarrassing things you could have said at that moment, "Mommy, I pooped again."

My face immediately felt hot & I could feel the color rushing to it. The other couple in the hot tub gave us a look, & I'm sure they were thinking about how quickly they could sprint their family out of the hot tub & shower off.

Except there were two things (which we sheepishly told the other family). First, you were wearing a swimming diaper. Second, this has become something that you just say.

You used to tell us when your diaper needed to be changed, & you were pretty spot on. Recently, you tell us, "I pooped again" frequently whether you've pooped or not. We're not sure why. It all started after the stomach bug hit our house. After the vomiting was over, you had days of diarrhea. One night you woke up several times crying because you had repeated diarrhea (I know, TMI, right? You're going to kill me when you're older). It broke our hearts to watch you continue to go through so much discomfort as you fought the stomach bug out of your system.

We're now happy that you're healthy, but the effects linger as you tell us 20 times a day, "I pooped again." The other day, you came up to me & said, "seriously, Mommy, I pooped." I couldn't help but laugh at your "seriously," but immediately felt frustrated when I checked you & you were dry. At times you freak out, crying & sometimes tantruming until we change your diaper...your absolutely dry diaper. These diaper tantrums seem to occur at the most inopportune times, like when we were halfway through a line at Disney World or when we're in the car & 15 minutes away from our destination or when we were sitting in a public hot tub.

All we can do is continue to check you 20 times a day & hope that potty training happens soon. Have any other Mommy & Daddys out there gone through this with their little ones?

In spite of it all, we had a lot of pool fun on our vacation. You're a little fish in the water. It's so cute to watch you kick your feet, but you love swimming in our arms best.


Yup, there was a pirate ship in the pool. It was also a water slide, but the slide wasn't currently in use. So cool.

growing into a beach bum


Dear Em,
Today is predicted to be in the 50s & rainy. I'm trying not to complain. 50s in February is warm for Rhode Island. When I think back to the sunny skies & trips to the beach we had last week, it's hard not to miss it.

My favorite part of our vacation was our beach trips. If nothing else, they gave me something bright & wonderful to look forward to this summer. I am a beach bum, as is my mom before me. There is nothing that I like better than spending a whole day at the beach...walking, castle building, swimming, sunning, reading...I love it all. I took you on your very first beach adventure when you were only 2 1/2 months old. We filled your Nonnie's SUV to the brim with baby supplies just to watch you sleep the whole time. It was a beautiful day, but I looked forward to the day when we could have fun at the beach together.

We've had two summers so far & our beach adventures have mostly been me bringing enough supplies to fill a house, dragging you & a wagon onto a crowded beach, & trying to clean the sand out of your eyes/mouth every ten minutes while you cry. We've had some fun moments & you enjoyed most of our adventures, but not without a lot of effort. Until now.

Last week I really started to see your love for the beach grow. You have a love/fear relationship with the beach, & I'm glad. I think it's healthy to have a little fear of something so powerful.

This week I brought only what would fit in my backpack. We went for walks, we searched for shells, we built sandcastles, we ate snacks, we soaked our toes in the water (it was a little too windy & cloudy to actually go swimming). We had fun at the beach together.



You fell asleep in your carseat before we had even pulled out of the parking lot. I looked back at you & smiled as I thought of all the times I spent an amazing day at the beach & fell asleep as my parents drove home.

I cannot wait for the beach days we will share this summer. Sigh, we just have to make it through the winter first.
